Here is a video of the no-oil Balsamic Vinegar Dressing that I demonstrated at the Cookery Demo on August 17th. The “secrect” ingredient here is Guar Gum that makes the dressing thick and rich without the aid of oil. Without oil you cannot emulsify a vinaigrette but the gum does a great job at replacing the oil.

You can make it without the Guar Gum, but it will be a little watery. My suggestion would be to add some plant-based mayonnaise to the mix which will make it thick and creamy.

This will store in a jar in the ‘fridge for a week or more.
