This is the salad that we both really enjoyed whilst on holiday in Oman this summer.  It is at once light and easy to eat when it is hot, but it sustains you through the afternoon.  The original used barley, but i used mixed grains.

You can use either just Balsamic Vinegar on this or the dressing shown on the video.
