In a hurry?  Need dinner fast?  Looking for something cheap and cheerful that is also healthy?

One of my “top tips” is to ensure that you have some starch ready as an easy base for a meal.  some cooked potatoes, some rice, corn or in this case quinoa.  I tend to cook a batch of quinoa or rice on a Sunday and pop it in a box in the ‘fridge, so I can make something quickly for us for supper after a long day at work.

An alternative, which is a bit more expensive is to buy the ready cooked rice, grains and quinoa in sealed pouches that you can just rip open and heat and eat.

This was just one of those kinds of a day, when we were both tired and wanted an easy dinner.

Ingredients:

2-3 Cups of Cooked Quinoa (or Brown Rice or other grain)

4 Sticks of Celery (trimmed and washed)

2 x Heads of Spring Greens Shredded finely  (Collard Greens in the US – i think)

1 tsp Vegetable Stock Powder (optional)

1 Tbsp of OMG Walnut sauce (Recipe – see here)

Method:

Reheat the quinoa in a microwave for 1-2 minutes.

In a saucepan, place approx 1 cup of water (from the kettle is quicker) and bring to a fierce boil, throw in the shredded greens and chopped celery.  Pop on a tight-fitting lid and steam for 2-3 minutes until the greens are soft and the celery softening.  You can remove the lid and boil off the remaining water. If there is too much water, then drain.  Throw in the OMG Walnut Sauce and mix thoroughly to coat the veggies.  Serve on top of the heated quinoa.

This works for lots of veggies, broccoli florets and strips of red pepper for example.  The celery could be replaced with large slices of onion (brown or red).

In all it should take you about 10 mins if you have the walnut sauce made in a jar in the ‘fridge and the cooked grains.  Then just sit down and enjoy a healthy guilt-free supper.
