One of the questions that I am often asked is: “How can I make something quick and delicious”?

Here’s an idea from a dish I made yesterday, during the cookery demonstration.

Ingredients:
2-3 cups of cooked Quinoa
3 Medium/Large Courgettes (Zucchini)
2-3 Cups of non-dairy Cheese Sauce see recipe
2 Tblsps of Fake Parmesan Cheese See recipe

In a shallow dish place an even layer of cooked quinoa. Just fluff with a fork to make sure you don’t have any lumps.

Remove the gnarly ends from the courgettes and then slice the courgettes into thick (approx 1/2 cm or 1/4 inch thick).

Heat a dry ridged griddle pan to a high heat. (If you don’t have one, use a dry frying pan). Lay the courgette slices on the hot pan in an even single layer and cook until charred lines appear. Flip and cook on other side. This should take about 2-3 mins each side. Place the griddled courgettes on top of the quinoa in an overlapping pattern and pour over the cheese sauce.

Sprinkle over the Parmesan.

Place into a hot oven for approximately 20 minutes until the top is browned and the sauce is bubbling.

Serve with a green salad, or a few green veggies on the side.
