This is the 3rd Salad that I made yesterday.
It’s a variant of one that I had at the Farms2Forks weekend and comes from the Engine 2 recipe book.
The original uses mandarin oranges. I’d not got any, so I used some chopped pineapple. It was just as good as the original.
1 bag of washed and prepared Kale
2 Tblsp No oil hummus (any flavour)
1/4 cup Lemon or Lime Juice
1/4 Tsp Salt or Herbamare
Splash of Hot Sauce
1/2 a Red or Yellow Pepper finely chopped
2 Med/Large Carrots shredded or grated
1 Med Red Onion , finely chopped
1 can of Mandarin Oranges or 1 Cup of finely diced Pineapple
Black Pepper to Taste
Mix avocado, hummus, lemon juice and hot sauce together until smooth and creamy in a blender or food processor. You need to make it like a mayonnaise texture, so add a little water or lemon/lime juice to reach the right consistency.
In a large bowl add the kale and pour on the dressing and mix to coat thoroughly. Then add all other ingredients and season.
Ideally leave for 30 mins for flavours to develop, if not, serve immediately.
Here is the finished salad served in a combo with the two others – spicy carrot salad and red rice salad and some hummus and biscuits.
