Need a quick and healthy dessert? We did. As we all now know berries are rich in antioxidants. It’s the perfect time for English berries so use any mixture you can get your hands on. You could also do this with apricots or strawberries ir with pineapple or banana later in the year, all of which would be delicious. So here’s a quick, healthy combination that is sweet and filling.

For 2 portions:

Ingredients:
1 pack of Blueberries (rinsed and drained)
1 punnet of Raspberries.
2 Tbsp Oats (toasted until golden brown in a dry pan)
2 Tsp Maple Syrup
4 Tbsp Plain or flavoured Yogurt

Method:
Rinse the berries and split between two serving dishes/bowls.
In a dry frying pan, toast the oats over a medium flame. Keep your eye on them and stir. You will create a lovely homely smell from the toasting oats.
When golden brown, turn off heat.
Add 2 Tbsp of soy yogurt to each bowl on the berries and top with the oats and drizzle the maple syrup on top.

I like the mixture of the warm oats and cold yogurt and the sweet berries.

We demolished these so quickly so no photo, but you get the idea, I’m sure.
