Coffee shop drinks are nearly always full of fat, unhealthy and hideously expensive.

Here’s what I made as a healthy pick me up today after cycling 24 miles having not cycled for ages.

You really need a high powered blender like a VitaMix for this.

Ingredients:
1 cup of Expresso Coffee gone cold.
1 Tbsp of Porridge Oats.
2 x cups of Plant Based Milk (I used rice)
2 Tsp Maple Syrup (optional)
3 Stoned Dates
1 Tbsp Desiccated Coconut (optional – does make it quite tropical but texture goes a little grainy).
2 handfuls of Ice

Method:

Put all ingredients in the blender. If you want it completely smooth – add the oats, coconut and dates in first with some of the milk/coffee. Blend till it resembles thick cream, then add remaining ingredients. Blend thoroughly until smooth and creamy.

Serve in a tall glass. You can dribble a little maple syrup over the top. You might need a spoon as once the liquid has gone the rest is like a tropical coffee granité.

You could always chuck in a banana too but I’d not got any left. If you don’t have maple syrup use agave.
