Hungry and in need of a quick lunch.

What better than a wrap?

For 1 person (3 small wraps or 2 large).

Ingredients:
2-3 whole wheat wraps
6 tsp peanut butter (ideally crunchy without salt such as meridian)
1/2 small avocado peeled and chopped
2 carrots grated
1 tbl sp vinaigrette.
Salt and pepper to taste
1-2 tbl sp cooked quinoa

Method

Spread each wrap with a layer of peanut butter
Mix grated carrots with quinoa and avocado. Mix thoroughly with vinaigrette.
Place carrot mix onto the wrap and roll up.

So simple. So quick and utterly delicious.
