I needed a healthy and quick lunch. I’d got some left over steamed new potatoes. So I made a healthy salad as follows:
(For 1 generous portion).
Fresh spinach or salad leaves – 1 handful
10-12 large slices of cucumber
2-4 tsp vinaigrette
1 cup of cooked New Potatoes in their skins. Roughly chopped
2 spring onions chopped or 1/2 an onion finely chopped
1/3rd pack of cooked quinoa (or half a cup)
2 tbl sp plant based mayonnaise
2 tsp of OMG Walnut Sauce
6-8 Cherry tomatoes quartered as garnish
Place the spinach or salad leaves as a base in the serving bowl or plate, place the cucumber slices around the edge of the bowl. Drizzle the vinaigrette over.
In a mixing bowl, mix the chopped potato with the onion, quinoa, walnut sauce and mayonnaise until coated. Taste and adjust seasoning (although be careful with salt as the Tamari in the walnut sauce is already very salty).
Pile the potato salad in the centre of the salad leaves. Scatter over the cherry tomatoes as a garnish.
