I know quinoa two days running, and why not? It is terribly good for you and so versatile. I cooked a load at the weekend and it makes a tasty and healthy lunch that i can throw together and still have time to blog the recipe! I also roasted some peeled and de-seeded butternut squash at the weekend, so threw that in too. That’s a handy thing to have in the ‘fridge – just peel and cube and roast on a teflon sheet at 200c with some seasoning – no need for any oils – it’ll take about 45 mins.
I decided to go all Mexican for this one!
Ingredients for the salad:
2-3 cups of cooked Quinoa
1 tim of Black Eyed Beans (drined and rinsed to remove excess salt)
Coriander – 1/3rd of a bunch finely chopped
Cucumber- 1/3rd julienned on the mandolin
10/handful of baby vine tomatoes – halved or quatered
Pecans- small hanful roasted for 10 mins at 200c (just to give some crunch)
! med Onion (red or white), finely chopped
1-2 cups of Butternut squash – roasted
1 small ripe Avocado
5 drops of Liquid Smoke (optional but gives a lovely and unique flavour)
1/3rd bunch of Coriander
4 Sun dried tomatoes (rehydrated in the microwave for 4 mins in a 1/4 cup of water and cooled) NOTE->> Do not use the oil packed ones as they are so high in fat
Salt to taste
Juice of 2 Limes (yes – you can use lemon at a pinch)
1 inch of Lime zest
3 cloves of Garlic – peeled and chopped
Squeeze of agave syrup (well it comes from a cactus – how mexican can you get?)
Optional – You could add some jalapeno chilis, chipotle or hot sauce, but i really wanted to taste the creamy smoky dressing without being overpowered by heat.
1/2 cup of water
Mix salad ingredients in a bowl thoroughly.
Put all dressing ingredients into a high powered blender (including the water that you’ve rehydrated the tomatoes in) or food processor and blend until smooth – it will resemble a loose guacamole, if too thick add more lime juice. Taste and correct seasoning – i like something like this to be sour and salty.
Mix the dressing into the salad thoroughly.
Ideal if you chill it for a couple of hours – but i had to feel a hungry Mr Gresham – so it was served straight-away.
